A driven individual who has graduated with a second class honours BA Degree in Culinary Arts from Dublin Institute of Technology. I have had the experience of working in a wide variety of professional kitchens across multiple countries. I am passionate about culinary arts, keeping up to date with the latest culinary trends and taking every possibility to improve my food knowledge and skills. I have been described as a strong communicator, diligent and enthusiastic by previous employers. My most recent role was the Kitchen Lead of Sprout & Co, Exchequer Street. Sprout has been leading the healthy fast food revolution in Dublin for the past five years. Starting as a small juice vendor in 2015 the company now boasts six city centre restaurants where healthy, seasonal and local produce is prepared every day by a team of dedicated chefs. My main duties as Kitchen Lead included; - Directing daily kitchen operations in accordance to company standards and food safety legislation. - Ordering fresh produce from the company farm and local suppliers on a daily basis. - Building strong relationships with the restaurant team, fellow managers and local suppliers. - Creating individual staff training plans and aided them in their own career development. - Optimising kitchen productivity to reach and often exceed daily, weekly and monthly targets. - Developing and introducing new policies and methods which focused on food quality and shop management.
