Please allow me to introduce myself. I am Mike Keenan and I am a Red Seal Chef from Toronto. I am a hands on leader who prefers to be in the trenches with the team, working together to provide a high level of guest satisfaction. I have been working in the hospitality industry for 24 years, managing operations, Front and Back of House for nearly 13 years. For the past 4 years I have focussed on Japanese Cuisine in a high volume environment. I have a multifaceted background with specialized skills including traditional Italian cuisine, Mediterranean flair, French and multiple Asian Regional styles (Vietnamese, Korean, Thai and several fusion influences). Don't let my most recent experiences mislead your first impression of my abilities I have many more skills dating back as far as 1991. I have worked every position in the kitchen efficiently and effectively throughout my career and easily adapt to any style or environment. In the past 15 years I have been involved with many successful corporate dining concepts and although these roles may have limited my opportunity to unleash my unique and creative style, I have gained an impeccable wealth of knowledge relating to systems and operational techniques that make those brands so successful.
